For 2 x 18 cm round baking tins
For the cakes
210 g plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 tsp all spices (mix of ginger, clover, nutmeg, cinnamon, etc.)
1 tsp cinnamon
1/8 tsp ground gloves
2 medium eggs
140 g brown sugar
70 g white sugar
1 tsp vanilla
1/2 cup (125 ml) vegetable oil
100 g finely grated carrots
70 g chopped walnuts
For cream cheese frosting
50 g soft butter
200 g cream cheese
1 tsp vanilla
1 tsp lemon juice
150 g icing sugar
To decorate
More chopped walnuts

looks yum! how to make sure it's moist?? what's the ingredient that's a must for it to be chunky and moist like that? I've always hated dry ass cakes :(
It’s just the ingredient combination, I think. I tried some other recipes, and the cakes turned out super dry. This one was nice, not dry at all. I think because of melted chocolate, butter & egg, milk combination, it gives enough moisture to the cake. 🙏
